Hello everybody:

I came to see what I could learn about smoking fish. I have some Opah, tell me how to make it magnificent...

Aloha and welcome.  There are a few post on here about smoking fish, but I think we mostly covered Marlin and Salmon.

There is a link to some grilled Opah, but it was not a traditional smoke.

I've only smoked Opah once, and quite honsetly... I wasn't overly impressed.  It was tougher than I had hoped, but was definitely still edible.  My family definitely prefers the Salmon and Marlin.
