These are amazingly flavorful and won us a 1st place in Anything Butt at the 2009 Prescott BBQ Days.  The picture on this link is the right cut of meat that you want to look for http://en.wikipedia.org/wiki/Short_ribs  The cut of meat on the right side of the picture is what you really want.  It's about the thickness of a #2 pencil and about 10 inches long.

Marinate the meat in.

2-3 lbs of short ribs
2 cups of soy sauce (Aloha Brand if you can find it)
1/2 cup of red wine
1 oz of fresh chopped ginger (fresh is important, but ground will do in a pinch)
3 cloves of chopped garlic
3 T of  brown sugar
2 T of sesame oil (this oil goes a LONG way in the way of flavor)
2 green onions sprigs (chopped fine)
1 t (teaspoon) of Anthony Spices Arizona Habanero

Mix the concoction well to make sure that all of the sugar is incorporated into the marinade.  Soak the meat overnight for at least 12 hours, 24 hours is best.

Throw the meat on a high heat grill and cook for about 3 minutes on each side.  They do cook fast, so dont walk away. 

Serve with white rice and your favorite macaroni salad recipe.
